If the exchange server is running pop and/or imap (most are) then use
fetchmail.

At work I run it every 20 minutes via cron to move all my mail from the
exchange account to my unix account.  If you use mutt to read your mail
it can also get your mail from an exchange server when you type "G".
rpms and .debs should exist for just about all linuxes for both.
