Thank you Jack and Frank.

After digging through the man page and --help, I found the
'-M' option
...
-M     Use the mapped volume for evaluating the percentage
representation like alsamixer, to be more natural for human ear.
...


So in my case "amixer -M set PCM 35%", will set the volume to 35% of
the maximum volume.

Now I need to put that in a cron script.
