While the Knoppix install itself is rather painless, due to the way Klaus
has set up Knoppix with packages from multiple repositories, it can be
quite a mess to upgrade if you don't take some steps following
installation. These steps involve basically editing /etc/apt/sources.lst
and dist-upgrading to unstable. 

If you do want to go the route of an easy-to-install Debian, I'd try
Kanotix (like Knoppix but pure Debian Unstable packages) or Ubuntu (which
does use the Sarge installer, but IMO is a bit easier) which is getting
quite a reputation that it "just works" right out of the box.

Otherwise, I'd go with what some of the others have said and install SUSE.
It IMHO has the very best installer out there in terms of blending ease of
installation with the ability for experts to make changes.
