You aren't going to be able to run three drives in a small case and be
fanless.  It sounds like this machine will have a lot of hours, so if you
do go with external enclosures you'll probably want one with a fan.  Look
at the reviews from a place like newegg.com, as some are quieter than
others.

If you try to run a fanless enclosure 24/7, you'll likely be purchasing
that new 750gb drive a lot sooner than you think :)

I personally like the Shuttle stuff also.  The mac-mini's suffer from the
smae problem as the 1st gen 20" iMac's -- too much form over function --
they both overheat and fail too easily.  

One last word of advice: living in a college dorm, you better epoxy
that machine to your desk, or wrap it in chains...
